Gorgonzola Bolo Burgers
Prepare your taste buds for a finger-licking experience with these outside-the-box burgers. And they’re simple, as well.
The key is in the prep. Break apart your ground beef and season liberally with sea salt and fresh ground pepper.
Next, fold in some crumbled gorgonzola about one part cheese to three parts beef. If you have time, let the mixture sit, covered, in your refrigerator for fifteen minutes to a half hour.
Assemble the mix into patties and grill two-to-three minutes per side in your Big Green Egg.
A couple of minutes before the burgers are done, warm but don’t toast some sliced Portuguese bolos for your buns.
We like to serve these with mayonnaise but use your preferred toppings. We predict this will be your new way of making burgers.
Grilled Pizza
Recipes for Big Green Egg pizza have become a trend, and we haven’t tried one yet that wasn’t fabulous.
The key to this recipe is the quality of the flour. Use good flour, like King Arthur. Let the dough rest in the refrigerator overnight for a crisper crust, or use it immediately for a softer crust.
A suitable sauce for pizza can be made by adding a little more sugar and oregano to your standby marinara. Believe it or not, we’ve found that the dried herb works a little better than fresh.
Roll out your pizza dough, don’t overdo it with the sauce, and pile on your favorite toppings (don’t forget to have a heated debate about the validity of pineapple on pizza).
We like to use fresh mozzarella, but you should get creative. A drizzle of good olive oil a moment before the pizza is done is a finishing touch that may work its way into your pizza repertoire.
Salmon Son Jus
There’s nothing quite like the earthy, melt-in-your-mouth goodness of perfectly grilled salmon. The secret ingredient in this super simple recipe is aluminum foil.
Trim and season your salmon filets and fold them in foil, with a lemon wedge, optionally, and leave a little space to vent. Keep the Big Green Egg at a low temperature, 250 degrees or so, and let the salmon cook slowly in its own juices.
Serve it on a bed of crisp greens for a satisfying and healthy summer dish.
Budget-Friendly Grilled Kielbasa
Infuse your summer with zesty flavors by grilling marinated kielbasa on the Big Green Egg.
This recipe uses a simple but very off-the-beaten-path marinade: Worcestershire sauce, cinnamon (trust us), black pepper, and a little salt (Worcestershire sauce has plenty already).
Kielbasa grills better when it’s sliced the long way, along its spine, rather than across like pepperoni. Marinate it in the sauce mix overnight or as long as is convenient for you.
Kielbasa is cooked before it’s packaged, so grilling time in the Big Green Egg just depends on how you like it. It takes well to a little char. The neutral flavor of kielbasa lends itself well to the strong flavors in this recipe.
Smoky Grilled Pineapple Dessert
End your summer meal on a sweet note with a smoky grilled pineapple dessert.
Slice fresh pineapple into thick rings and brush them with a mixture of honey, cinnamon, and a dash of cayenne pepper for a delightful kick.
Place the pineapple rings on the Big Green Egg, letting the flames kiss them with char and infuse them with a smoky flavor. Serve them warm with a scoop of vanilla ice cream for a tropical treat that will transport you to paradise.
